Mark Brader has provided the following tables of probabilities of the various five-card poker hands when five cards are dealt from a single 52-card deck, and also when using multiple decks.
The traditional hand types are described on the poker hand ranking page. These include one hand that belongs to two types at once - a straight flush is both a straight and a flush. With two or more decks, it is possible for other combinations to occur, such as a hand that has both a flush and a pair (such as 4-6-6-8-9 all of one suit). The left-hand tables include these composite hand types for multiple decks; in these tables 'plain' means a hand that is not a flush.
The hands are listed in descending order of probability, which could be used as the basis for their ranking order in multi-deck poker variations. It can be seen that as the number of decks increases, flushes become easier to make than straights, and sets of equal cards become more common.

The dealer deals a card face-down to each player, and then exposes the top card off of the deck. The first player to the left of the dealer has the option of either choosing the exposed card or a blind one from the top of the deck. Whichever choice the player makes, that player receives the card in his hand face-up. If that player chose the exposed card, then the dealer replaces it with the next card off the top of the deck and gives the same choice to the next player. If that player chose a blind card, then the next player is given the option to take the exposed card or a blind one.

The exposed card is not replaced until it is either chosen by a player or the dealer turns it down. Once the dealer turns it down, the round of dealing is over, followed by a betting round.

When the next round of dealing starts after the betting round, whichever card was exposed is placed at the bottom of the deck, replaced by a new card from the top of the deck. This continues until each player has one card in the hole and four cards face-up. There is a final betting round and the best hand wins.
